Why play against a computer at all?
Playing a human is better for the feel of a real game, but the computer has three things going for it: it is always available, it never gets impatient, and it never judges a bad move. If you are learning an opening, drilling an endgame, or just want a quiet game at 2am, the engine is the better opponent.

Good ways to use it
Learn an opening. Play the same first five moves ten times and see what the engine throws back at you. You will learn the position far faster than reading about it.
Practise an endgame. Set up king and pawn against king and try to win it. The computer will punish every inaccuracy, which is exactly what you want.
Warm up. A quick game before facing a human gets your eyes working again.
A note on difficulty
Most people set the engine too high and then lose forty games in a row, which teaches nothing. Start lower than you think you need. If you win comfortably three times, move it up one. The point is to play positions you can actually understand.
